Mocha Cupcake - Lil's version :)
(Original recipe - Tipsy Mocha Cake)
Adapted from Periplus Mini Cookbooks
Ingredients:
250g Butter, softened
1 cup Castor Sugar
4 eggs
2 cups Wholemeal of white self-raising flour, sifted
1/2 cup Cocoa, sifted
Syrup:
1 Tbs Castor Sugar
2 tsp instant coffee powder
3 Tbs boiling water
2 Tbs Vanilla essence or coffee-flavoured liquer/brandy
Decoration:
1 Cup cream
chocolate chips/any other decoration
Method:
1. Preheat oven to 180 deg C
2. Beat butter and sugar with electric beaters in small mixer bowl until light and creamy. Add eggs gradually, beating well after each addition.
3. Transfer mixture to large mixing bowl. Using a metal spoon, fold in sifted ingredients. Stir until just combined and the mixture is almost smooth.
4. Spoon about 1 rounded Tbs into cupcake cups. Bake for 20 minutes or until skewer comes out clean when inserted in the centre of the cake.
5. Prepare syrup. To make Syrup: Dissolve sugar and coffee in boiling water; stir in vanilla essence (as I am preparing these for my kids)
6. Spoon syrup over the cupcakes while still warm. Let the cupcakes cool before adding the cream.
7. To decorate,
a. Cream version:beat cream until it is just stiff and spoon on top of the cupcake, smooth it and decorate it with chocolate chip :) my chubby munchkin and my godson loves this version
b. Chocolate version: Place chocolate in a bowl. Set the bowl over another container with barely simmering/boiling water and stir chocolate gently until melted. Add 1 Tbs of butter and continue to stir until melted. Cool slightly before use. Spoon on top of the cupcake and decorate it . In this instance I used some sprinkle stars that I bought previously. Kim and Nat loves this version. Heaven for chocolate lovers.
c. No decoration: Ruth loves this version. However, the taste of coffee is strong. She just loves it :)

OK..if you want to make it as a whole cake, everything still stays the same except that it is being transferred to a cake tin. In this instance, I used my mom's previous cake tin for pandan cakes :)
